Just to let you in on how crazy my mind is, I found this recipe in the fall and have been saving it for this moment. How perfect does strawberry hot chocolate sound to serve on Valentine’s Day to your family? I mean, its so cold here that I’m starting to mark my days by counting who fell on their ass each morning as we walk the little man to school. If you’re curious, the ice is up by 1. So the thought of some snuggles with my loves this Valentine’s Day with this decadent recipe is perfection in my mind.
BUT…the recipe that I found was anything but skinny…it was in fact the full fat variety, and I knew that I needed to figure out my own way so that I wouldn’t feel guilty having a second cup!
So here it is my lovelies, the skinny version:
Skinny Strawberry Hot Chocolate for Valentine’s Day
- 4 tablespoons plain yogurt
- 1/2 cup organic coconut sugar
- 1 pint reduced fat, sugar free strawberry ice cream
- 4 cups water
- Optional: reduced fat whipped cream
- Optional: chocolate sprinkles, to taste
On the stove top, mix together the yogurt, sugar, and ice cream until it has all melted. Start pouring in the water slowly, starting with just 1 cup and increasing it until you get the consistency that your family likes. Continue heating until it is steaming hot. Pour into your favorite mug and top with the whipped cream and sprinkles if you choose…voila!
